Fresh and bloomy rind cheeses such as Chevre, Feta, Mozzarella, and (most) Bries
Pair them with…Wheat beers or Saison
NUTTY, AGED CHEESES
Goudas, Clothbound Cheddars, Aged Goudas, Apline Cheeses
Pair them with…IPAs, Pale Ales, Amber Ales, or a Stout for aged Gouda
FUNKY, CREAMY CHEESES
Washed rind cheeses such as Epoisses, Grayson, Gubbeen
Pair them with…Farmhouse Ales, Saison, Belgian Ales
All blues from creamy to crumbly and mild to pungent
Pair them with…IPAs, Stouts and Porters
COMPLEMENT OR CONTRAST
You want the beer and the cheese to either complement or contrast each other. Do the flavors create a happy marriage in your mouth or does one change the flavor of the other, but in a positive way?
LIGHT & DARK
As a general rule of thumb, pair lighter beers with lighter cheeses and darker, more complex beers with aged, complex cheeses.
ORDER IS EVERYTHING
Always start with the lightest pairing and work your way to the more complex, heavier pairings.
